ADAM HENWOOD
Adam Henwood's journey to chef and restaurant owner is not your typical one. From humble beginnings in Winnipeg, Manitoba Adam left for the big city of Toronto shortly after High School and after a few stumbles pursued an educational path that eventually led to law school and him becoming a lawyer. Adam graduated with an Automotive Business diploma from Georgian College in Barrie, Ontario, followed by a Bachelor of Commerce degree from the University of Windsor, and eventually a Bachelor of Laws degree from the University of Alberta in Edmonton.
While pursuing his education Adam always worked in the restaurant industry. From dishwasher, host, busboy, bartender, and waiter he's had a bird's-eye view of the restaurant business for many years. All of that sadly stopped when Adam became a lawyer. Adam practiced family and child protection law in Alberta for 17 years before the pull to return to the restaurant industry was too great to ignore.
Closing his practice and law office in Calgary to move to a small town in Saskatchewan to open a restaurant was a big risk. Many said he was foolish, a sentiment he understands, but also serves as a motivating factor to be successful. Adam describes the transition from lawyer to restaurant owner as going from one stressful career to another, but the difference with practicing law is that there is usually some financial incentive involved in that pursuit; the restaurant business, not so much.
Throughout the years Adam has had the opportunity to travel a fair amount. From doing human rights volunteer work in Ghana and Zimbabwe to personal travels throughout Sweden, Europe, U.S.A., South America, and South-East Asia, Adam has gravitated to learn about different cuisines from the countries he has traveled to. Adam has also spent a considerable amount of time in Cambodia where his friends own a cooking school in Phnom Penh. As a self-taught chef with a passion for learning (and eating!) Adam knows that at some point in the future, the keys to Trigo Food + Drink may pass on to someone else and that's when you will find him operating a street food cart on the bustling streets of Phnom Penh.
